Shepherd’s pie can have one or two crusts usually made from mashed potatoes. Shepherd’s pie is designed to take advantage of leftovers and less expensive, tougher cuts of meat that tenderize well in the slow cooking.  Tougher, fattier pieces of meat generally have more flavor than leaner cuts, and are ideal for this dish. Shepherd's Pie Recipe

Ingredients -
Instant Mashed Potato Flakes
1 medium Sweet Potato, peeled and diced
1/4 teaspoon Pepper
1 1/4 pounds Lean Ground Beef
1 medium White Onion, chopped
1 teaspoon Dried Thyme Leaves
1 (1.25 ounces) envelope Hunter Sauce Mix
3 tablespoons Tomato Paste
1-1/2 cups Water
1 (16 ounces) bag Frozen Mixed Vegetables
Preparation:

1. Preheat the oven to 400 degrees.

2. Prepare the mashed potatoes according to the directions on the package, adding the diced sweet potatoes to the water.

3. Bring the water to a boil, reduce the heat and simmer until the sweet potatoes are fork tender.

4. Remove the pan from the stove.

5. Do not drain.

6. Mash the sweet potatoes in the pan with a fork, then continue following the package directions.

7. Add the pepper and stir to combine.

8. In a separate skillet, brown the beef with the onion, until the beef is no longer pink.

9. Add the water, tomato paste, sauce mix and thyme.

10. Mix well to combine.

11. Bring the mixture to a boil.

12. Add the vegetables and remove the pan from the heat.

13. Transfer the mixture to a 2 quart baking dish.

14. Evenly spread the mashed potatoes on the top.

15. Bake for 20 minutes or until the mixture starts to bubble and is heated through.

16. Increase the heat to broil.

17. Place the casserole under the broiler until it turns a light golden brown.
